What gets booked out at the west end
There is no events calendar here in the way a city has one. What a community this size generates is private: a ceremony on family land, a reunion with people coming in over a pass from both directions, a fundraiser for something local, a company that has taken a house for a weekend and needs one proper meal in the middle of it.
Those are all days where the guests are travelling to reach you, which changes the shape of them. People arrive across a window rather than at an hour, and the meal has to survive that. It also means almost nobody is local to the site — including, often, the host — so the practical questions get asked late unless somebody raises them early.
Two things to settle before you pick a date
Neither of them is about food, and both take longer to get an answer on than the menu ever does.
- Which state you are in
- Nevada or California changes the county, the fire authority and whose rules a caterer is working under on your ground. If the site is anywhere near the line, confirm it rather than assume it.
- What the fire restriction says
- Open-flame cooking gets restricted in the dry months along the edge of the canyon. Ask the fire authority for your address what is in force on your date, and where a cooker with a live fire in it is allowed to sit.
The line on the map and the season on the calendar
If the site is near the state line, and plenty out here are, establish which side of it you are on before anything else is decided. Nevada and California mean different counties, different fire authorities and different rules for an outside vendor working on private ground, and an address by itself will not always tell you. It costs one phone call and it can change what permission a host needs.
The ground decides the season as well. Where a valley floor meets a canyon and a tree line, the dry months bring restrictions on open flame, and a rotisserie smoker is an appliance with a live fire in it. We work within whatever is in force, but where the cooker may stand is not always a free choice in August, and that is far better settled in June.
The honest answer about size
Full service is what makes a trip out this way worth anybody's morning, and the published floor for it is 40 people. Check yourself against that number first, because the other honest sentence on this page is one caterers do not often write down: below the 20-person minimum for a drop-off there is nothing we can sell you at all, and a gathering in a community this size is quite often below it.
If your numbers clear the floor, the distance stops being the problem. The crew is committed to the day either way, the travel fee our printed terms apply outside the immediate area goes onto the quote, and what turns up is the cooker, the tents, the tables and the people to run all three.
